Newcastle students create Caribbean menu for Latino festival

FUN IN NEWCASTLE: The ¡VAMOS! Festival celebrates Spanish and Portuguese speaking cultures

A GROUP of college students have created a Caribbean-themed menu for a supper club as part of a Latino and Caribbean culture festival in Newcastle.

Food lovers in the North East will get a taste of Caribbean and Latino food right on their doorstep at ¡VAMOS! Festival. The popular festival, which celebrates Spanish and Portuguese speaking cultures, is coming to venues across the region from Wednesday, June 8 until Sunday, June 12.

As part of the event visitors will have the chance to taste authentic international cuisine at the festival’s Caribbean supper club, a Latino Food Social and its international food stalls, the Newcastle Chronicle reported.

A Caribbean supper club with Pulitzer Prize-winner Junot Díaz is first on the menu taking place on Thursday (Jun 9).

Students from Newcastle College have been preparing the Caribbean-themed menu for the supper club with Díaz. The menu features dishes which include jerk chicken and Caribbean rum cake amongst other Caribbean-themed dishes.

Philip Pringle, lecturer and course leader in food and hospitality at Newcastle College said: “It is important that students are exposed to diverse ingredients and cooking methods in today’s multi-cultural society. As a college – we have been working successfully with ¡VAMOS! for over three years and held the popular Chocolate Noche event as part of last year’s festival.

“This project saw the students design, create and cost menus then present to the Festival Director Nikolas Barrera at ¡VAMOS! Social cultural hub. This has not only strengthened their culinary wisdom, but honed their interpersonal and communication skills.”
